Let's Talk Fat - A shortbread cookie recipe 4 You!

In our healthy meal prep company, our chef and team are always looking for ways to provide options for our wonderful customers in our chef prepared meals. 


Fat is something we cook with all the time - meaning we think about it a lot. Cooking fats break down into two general categories. Processed and natural. For processed fats one is looking generally at margarine and its offspring. For natural fats we can subdivide this category into two more categories animal (think butter or lard) and plant products (coconut oil and olive oil are two good examples). 


In meal prepping desserts, our team has looked at ways of minimizing the animal products found in our baked goods. One fat we have surprisingly turned to is avocados. This Plant based, heatlhy eating, natural fat makes for some interesting flavors in our desserts. One of the challenges of using avocado is it does not melt like butter. If you use a little unsweetened apple sauce this provides a plant based option for cooking.

Just 4 You Meals Shortbread Cookie


  • 1 avocado
  • 3 tbs applesauce (unsweetened)
  • 3/4 cup stevia
  • 2 cups almond flour
  • 2 eggs
  • 1 tbs vanilla extract


  1. Preheat oven to 350 degrees.
  2. Extract the avocado from its shell and toss the seed. Combine with eggs, applesauce, and vanilla extract.
  3. Mix in stevia.
  4. Add almond flour. You want the consistency to be a paste but not hard. If it needs more liquid use a bit more apple sauce, and if it is too runny add more almond flour.
  5. Bake for 10-12 minutes.

This recipe is great for adding other items you may enjoy: nuts, dark chocolate, fruit, etc.
